Lunches

*Garden salad, fruit salad

*Veggie pita pockets, grapes

*Wheat pizza, side salad, apple wedges

*Boost strawberry shake, PBJ


Dinners

*Leftover Night (TONS of food from party is left..woo-hoo!)

*Salad with tuna, dinner rolls

*Chicken Diane, corn, string beans

*Spaghetti with meatballs, side salad, garlic bread

*Family Fun Night at Church: Breakfast for Dinner Night (I'm bringing this casserole)

*Sausage and peppers over penne, Italian green beans

*Black bean soup, chips 'n salsa


Snacks

*Apples with peanut butter

*Fresh mozzarella with roasted peppers

*Mixed nuts

*Wheat pretzels with southwest mustard

*Raspberry sorbet

*Popcorn

Thanks for stopping by! Notice I didnt post the recipe for the lantham stew! I dont really like it that much, but its one of my husbands favs! It's like a random casserole from the depression era!

Hobo stew is (for me) 1 lb. ground beef (browned), 1 lb. link sausage (cut into thin rounds), 1 medium onion (sauteed with meats), and then whatever frozen, fresh, or cans of veggies I want to throw over in the pot!! It's called Hobo b/c it can have whatever you wish to put in it..any meats that you want, any veggies that you want. If you do not use canned veggies, then add whatever kind of broth you want to it. Let it simmer for 45 minutes and then I serve it with cornbread! It's that easy! :o)

well, I'l share the recipe, but please know its not really anything I would cook for anybody! My husbands parents grew up on it, so my husband grew up on it too! I think its bland and weird! haha
Peel 4-5 potatoes and cut in chunks. Line the bottom of a greased casserole pan. Add 1 onion diced. 4 TBL dry rice, then 4 TB elbow macaroni (I use a little more than that!), then 1 can pinto beans (with juice!), 1 pd. beef, then end with 1 can diced tomatoes (I blend it up for my kids). Sprinkle some salt and cover. Bake at 350 for 1 1/2 hours. Wah la!
