Tonight is Back-to-School Night at my son's school and since I am Room Mom Leader, cookies have been my mission today! My house is bursting with the aroma of cinnamon and sugar, and dozens upon dozens of homemade Snickerdoodles are resting on cooling racks as I type. I hope the other parents and staff enjoy my efforts.

Here's my recipe so you can enjoy the cinnamon-y goodness in your home!

SNICKERDOODLES

INGREDIENTS

  • 1 cup shortening
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • Cinnamon-sugar mix

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. In a large bowl, cream together the shortening and sugar until smooth. Beat in the eggs one at a time then stir in the vanilla. Combine the flour, baking powder and salt; blend into the creamed mixture. Roll dough into 1" balls and gently roll in cinnamon-sugar mix. Place them 1" apart onto cookie sheets. Flatten each ball slightly.
  3. Bake for 9 to 10 minutes. Allow cookies to cool on baking sheet for about 3 minutes before removing to a wire rack to cool completely.

Thanks for posting this! I just had some yummy snickerdoodles at a baby shower and was looking for a TNT recipe!

Be thankful that your school district still allows home baked goodies. Everything that comes into our school must be store bought. It really puts a crimp on things from fundraisers, after school events, etc.
