Our family went apple picking at a local orchard over the weekend and we have loads and loads of the biggest, reddest apples I have ever seen! What better to whip up with all those apples than some delicious Jewish Apple Cake?
I'd love to tell you some heartwarming tale of how my little old Jewish Great-Grandmother created this recipe to treat our family to a yummy fall treat, but to tell the truth...I read this recipe in the Philadelphia Inquirer years ago (I do really have a Jewish Great-Grandmother!).
I tried this recipe out for Thanksgiving once and it was such a hit that I have been getting requests for it ever since!

Jewish Apple Cake
Ingredients:
-4 apples, peeled and diced
-2 cups sugar
-2 eggs
-1 cup oil
-3 cups flour
-1/2 tsp. salt
-1 tsp. cinnamon
-2 tsp. baking powder
-1 tsp. vanilla extract
-1/4 cup raisins
-1/4 cup chopped walnuts
Directions:
Peel and chop apples and mix with sugar in a bowl; refrigerate while preparing other ingredients. Beat eggs and oil together. Stir in flour, salt, cinnamon, and baking powder. Add apple mix in. Stir in vanilla, raisins, and nuts. Pour into 2 greased loaf pans. Bake at 325 degrees for 1 hour and 20 minutes.
Let cool and wrap loaves tightly to preserve moisture.

Thanks for sharing! We have our own apple trees and DH has already made a pie. I think I will try this recipe. It sounds so good!
We didn't have a great harvest this year but we did feed the local squirrels!
